Yummy and Healthy Salmon Dinner

I made such a delicious meal the other night I had to share!  I don’t call myself an amazing cook by any means but I sure am learning.  My husband has always been the main cook in the relationship but since I’m mainly a stay at home Mom I decided to do a little bit more of the cooking.  I’m not one to make up a dish really on my own…I’m a very by the recipe kind of cook.  I’ve also learned a lot from my husband.

I decided to make a one dish salmon dinner which I discovered from Mom’s Endeavors website.  It’s super simple and you only have to clean one dish!  I don’t use the herb butter but rather I just sprinkle some garlic salt on the top of the salmon and place some butter on top.  I have done different vegetables on the side each time I’ve made it.  It is such a yummy and healthy salmon dinner.

This time I decided to make this yummy parmesan corn and zucchini side dish.  It was so good and I will definitely be making this again.  I got the recipe from the Damn Delicious website.  Rather than cooking it in a pan I just combined all of the ingredients together and put them on the side of the salmon.
